Country Cabbage Soup


Country Cabbage Soup

1 lb. ground beef (or you can use spicy sausage)
2 cans diced tomatoes
1 medium head cabbage, shredded in strips
1 large onion, chopped
6 celery ribs, chopped
1 tsp. pepper
1 tsp. oregano
1 tsp. garlic salt
Crushed red pepper flakes (about 1/8 tsp.)

Brown the beef in a large skillet and add onions once it is mostly cooked. Allow onions to sauté until translucent. Pour in large pot and add tomatoes, cabbage, celery, spices, and 2-3 cups water (don’t let it become dry). Bring to a boil and then cover and simmer on low for 20 minutes or until vegetables are cooked.

Yields: 5-6 medium servings
