Improv Fajitas


Improv Fajitas

2 chicken breasts, uncooked
2 green peppers
1-2 red peppers
1 large onion, in strips/large pieces
½ cup water
1 ½ TB cumin
2 tsp. pepper
1 clove garlic
1 tsp. paprika
1 tsp. chili powder
2 tsp. Oregano
2 tsp. brown sugar
2 tsp. lemon juice
1 TB soy sauce

-Cut chicken into 2” long strips and cook in large sauté pan with 1 TB oil. Slice green and red peppers into 2” long strips, saving seeds. Add onion, peppers, and ½ cup water to pan.
-Add all seasonings and seeds from peppers.  Allow to simmer until vegetables are cooked as desired. Add water if necessary-do not let bottom become dry.
-Remove form heat and serve in warm tortillas with sour cream and cheese.

Yields: 7-8 medium servings
