Light Whole Wheat Bread


Light Whole Wheat Bread

3 ½ cups water
2 eggs
1 cup honey
1 cup oil (1/2 oil, ½ applesauce)
8 cups whole wheat flour

Mix and let sit for one hour.
Add:
1 cup hot water mixed with 4 TB yeast
5-6 cups whole wheat flour
4 tsp. salt

Knead in mixer for 8 minutes. Let rise until double (about 30 minutes). Turn on mixer for one rotation.  Let rise again, about 30 minutes. Divide into 5-6 loaves. Roll out, then roll up and tuck ends under for each portion. Place in lightly greased 9x5 loaf pan. Let rise in pan until double. Bake at 350 for 30 minutes. Remove from pans to let cool on wire rack.

Yields: 5-6 loaves
