Pancakes
Yields: 8 servings (9x13 pan) though in my family that feeds 4 people
4 TB
butter
6 eggs
1 cup
flour
1 cup milk
½ tsp.
salt
-Place
butter in 9x13 pan and place in preheating oven. Don’t let it burn.
-Beat
eggs. Stir in milk, flour, and salt. Mix well. Pour batter over melted butter.
-Bake 450
for 15-20 minutes or until edges are golden brown.

Adding apples! You can dice, slice, or grate (my kids' favorite) apples - mix with cinnamon, a bit of nutmeg, and some brown sugar - and either set them in the dish while preheating to saute a bit (takes longer than just melting butter) or saute in a fry pan and add to the baking dish right before you pour the pancake mixture. The grated apples you can just add to the batter. Prepare for a littleleff puff to your pancakes dish, though.
**To make a single casserole for more people, use 9 eggs, 1.5 cups flour, and 1.5 cups milk. Still fits in a 9x13.
