Massaman curry paste

chicken breasts, cooked & cubed

med onion, diced

medium carrots, diced

medium potatoes, uncooked & diced

can coconut milk

c. peanuts
Cook
chicken in medium skillet with diced onions. Sauté curry paste and oil in large
pan. Add 1 cup coconut milk and mix well. Add chicken, onions, and remaining
coconut milk and bring to a boil. Add
potatoes, carrots, ½ cup water, and peanuts. Cover and cook until vegetables soften.
Don’t overcook the potatoes. Add ½ milk if liquid seems low. Add 3 tsp. sugar
and curry powder to taste (1 tsp.). Serve over white or jasmine rice.
