Teriyaki Turkey Lettuce Wraps


Teriyaki Turkey Lettuce Wraps

1 lb. ground turkey
3-4 carrots, shredded
4-5 green onions, thinly sliced
¼-1/2 cup teriyaki sauce
½ tsp. crushed red peppers
¼ tsp. garlic powder
1 head iceberg lettuce
Optional white/jasmine rice
Optional finely chopped peanuts

In large skillet, heat 1 TB olive oil over high heat. Add turkey and cook, breaking up meat with a spoon, until browned (about 4 minutes). Stir in carrots, green onions, and ¼ water. Lower heat to medium-low. Cover loosely and cook until the water is absorbed and the veggies are soft (about 4 minutes). Stir in the teriyaki sauce to taste and cook until heated through (4 minutes).  Serve with optional rice and with lettuce leaves. Place about ¼ cup mixture in each lettuce leaf, topped with peanuts, and roll up. 

Yields: 5-6 medium servings
