Teriyaki
Turkey Lettuce Wraps

lb. ground turkey

carrots, shredded

green onions, thinly sliced

cup teriyaki sauce

tsp. crushed red peppers

tsp. garlic powder

head iceberg lettuce

white/jasmine rice

finely chopped peanuts
In
large skillet, heat 1 TB olive oil over high heat. Add turkey and cook,
breaking up meat with a spoon, until browned (about 4 minutes). Stir in
carrots, green onions, and ¼ water. Lower heat to medium-low. Cover loosely and
cook until the water is absorbed and the veggies are soft (about 4 minutes).
Stir in the teriyaki sauce to taste and cook until heated through (4
minutes). Serve with optional rice and
with lettuce leaves. Place about ¼ cup mixture in each lettuce leaf, topped
with peanuts, and roll up.
