Alyssa's French Bread


Alyssa’s French Bread

Yield: one loaf

1 c. hot water
1 TB sugar
2 ¼ tsp. yeast


1 tsp salt
1 c. white flour
½ c. wheat flour
1-1 ½ c. white flour



Prepare yeast in water and sugar mixture. Let sit 8 min. Add salt, white flour, and wheat flour. Mix well. Add enough extra white flour to form a soft dough--probably 1-1 ½ c. Place dough onto floured surface. Knead for 4-5 min until dough is smooth and springy. Put dough in a bowl and cover with a wet, hot towel. Let rise in a warm place 45-60 mins. or until doubled in size. Remove from bowl onto lightly floured surface and roll with rolling pin into a rectangle. Roll dough up-it should be long, not short and fat. Place on a greased cookie sheet. Cut slashes into top of bread. Cover with towel again and let rise for another 45 -60 mins. until doubled in size. Mix 1 egg white and 1 TB water. "Paint" top of loaf after it's risen. Bake about 15 mins. at 400 degrees. Cool on rack.
