Kid-friendly Healthy Banana Bread

Yield:
one loaf

c. sugar
½
c. applesauce

eggs
4
TB sour cream
1 ½
mashed bananas
½
c. grated zucchini
2
c. flour (white wheat, doesn’t make it heavy)
¼
tsp. salt
1 ¼
tsp. baking soda
1
tsp. vanilla
½
tsp. nutmeg
½
tsp. cinnamon
Cream
sugar, applesauce, eggs, sour cream, and bananas. Add zucchini and mix it in.
Add everything else and mix well!
Pour
into greased loaf pan (or muffin tins). Bake at 350 for 55-60 minutes (top will
look pretty done before the middle is)
**you can slice up and freeze, pull out slices for
food on the go for kids
