Feta Orzo


Feta Orzo
Yields: 6-8 servings (depending on use as a side or main dish)

1 box orzo (in pasta section)
6-8 oz. pesto
6-8 feta cheese
1 c. cherry tomatoes cut in half

Cook orzo according to directions, drain, bring to room temp.
**If adding chicken, slice raw chicken into thin slices/strips and saute with a few cherry tomatoes and pesto until fully cooked
Add remaining ingredients and mix. (adjust ingredients according to desired taste. I've left out the pesto when I don't have any and it turns out great.)
Serve at room temperature and store in fridge.
