Queso Blanco
yield: about 2 c. queso
16 oz. white American Cheese (Land-o-lakes brand from the walmart deli counter...not the singles packs on the cheese aisle)
2 cans (8 oz total) diced green chilies (mild, or whatever spice level you prefer)
1/2 c. cream
1/4 - 1/2 tsp cumin
Some chicken bouillon (depends on the brand, but maybe 1/4 tsp dry or equivalent)
*for more spice, you can add pepper, diced jalepenos, hot sauce, use spicier chiles, etc*
Melt it all in a sauce pan on medium-low, stirring constantly.
Eat right away and enjoy!
