Kathy’s Oatmeal Cake

Yield: one 9x13 pan
1 c. oatmeal
1 ½ c. boiling water
2 eggs, beaten
1 cube margarine
1 c. brown sugar
1 c. white sugar
2 c. flour
1 tsp. cinnamon
¼ tsp. nutmeg
1 tsp. baking soda
1 tsp. salt
½ tsp. baking powder
1/4 c. grated or chopped chocolate chips
1/4 c. grated or chopped chocolate chips
Topping:
1/3 c. brown sugar
1/3 c. chocolate chips (chopped or pulsed in a blender a few times)

½ c. nuts (optional)
Soak oatmeal in boiling water (remove from stove) for 20 mins. Cream margarine, sugars, and eggs. Add oatmeal and remaining ingredients and mix well. Pour in 9x13 pan. Sprinkle evenly with topping. Bake 35 mins at 350.
Delicious with vanilla bean ice cream or fresh whipped cream.
