Mini Cheesecakes


Mini Cheesecakes

Yield: 48 small cakes **Can also be used for one whole cheesecake


Crumbled Graham Crackers
2 TB butter
2 8-oz. pkgs. Cream cheese
¾ c. sugar
3 egg yolks
3 egg whites
¾ c. sour cream
2 TB sugar
1 tsp. vanilla

Mix crackers and butter. Pat some into each hole in a muffin tin. Combine cream cheese, sugar and yolks. Fold cream cheese mixture into beaten egg whites. Fill each tin to the top. Bake 15 mins. at 350. Cool 5 mins. Combine sour cream, sugar, and vanilla and put a drop on top of each cheesecake. Bake an additional 5 minutes. Cool completely before removing from pan.
