Chocolate Crinkle Cookies

Yield: 2 dozen
1 1/4 cup sugar
1 tsp. vanilla extract (or mint extract, see note at bottom)
2 eggs
1 2/3 c. flour
1/2 cup cocoa powder
1 1/2 tsp. baking powder
¼ tsp. salt
1/4 cup sugar
1/3 c. powdered sugar
Cream softened butter and sugar until smooth. Beat in eggs one at a time for 30 seconds. Add vanilla. In a separate bowl, mix together flour, cocoa, baking powder, and salt. Add flour mixture to creamed sugar mixture and mix until a soft dough forms (don't over beat). Chill dough for at least one hour. Place sugar in a bowl, and powdered sugar in a separate bowl. Form dough into 1 TB (or cookie scoop size) ball and roll in sugar then roll in powdered sugar. Place on a well-greased pan or use a silicone baking sheet. Bake at 350° for 12-13 minutes. Cookies are done when the tops are cracked and they have spread a bit. Try not to eat them all at once!
**To experiment with a different flavor, add 1/4 tsp peppermint flavoring to the dough instead of vanilla!
