Basmati Rice

Yield: 6-7 servings
2 c. basmati rice
3 ½ c. water
½ tsp. curry powder
¼ c. sliced green onions
½ c. frozen peas, thawed
¼ c. fresh cilantro
Rinse the rice, then place in a small pot with water. Bring to boil, then cover and reduce heat to low. Cook until water is gone and rice is light and fluffy (about 15-18 minutes). Remove from heat and gently stir in remaining ingredients. Let sit 2-5 minutes and serve.
