Garlic Roasted Potatoes

Yield: one 11x17 tray of diced potatoes
1 TB oregano
½ TB Italian Seasoning
1 tsp. onion powder
1 tsp. paprika
1 tsp. garlic, minced
2 tsp. salt
1 tsp. pepper
1-2 TB oil, dependent on how many potatoes you use
4-6 medium potatoes
Wash potatoes, but leave peels on. Cut the potatoes about the size of large grapes and place in a bowl with the oil, salt, pepper, oregano, Italian seasoning, onion powder, paprika and garlic; toss until the potatoes are well coated. Transfer the potatoes to a pan and spread out into 1 layer. Roast in the oven at 400 degrees for 45 minutes to 1 hour or until browned and crisp. Flip twice with a spatula during cooking in order to ensure even browning.
