Yield: two 13x18 pans
6 large potatoes
2-3 TB oil
Salt
Pepper
Garlic salt
Cajun seasoning
Optional: onion powder, garlic powder, Greek seasoning instead of Cajun, etc.
Wash and cut potatoes (cut in half like a hot dog bun, then slice each half into 10 long, thin slices. Each thin slice should not be bigger than ¼”.) Toss potatoes with oil until well coated. Add seasonings until evenly coated. Layer potatoes in a single layer on two baking sheets. Bake 8-10 minutes at 400 and then flip the potatoes and bake another 10 minutes. They should be soft but a bit crispy on the outside. Smaller pieces may be crispier.
