Chicken Peanut Butter Noodles

Yield: 4-6 servings
1 8-oz. package whole wheat spaghetti
3-4 chicken breasts, cooked and diced/thinly sliced
5 TB creamy peanut butter
3 TB seasoned rice vinegar
1 TB reduced sodium soy sauce
½ c. chopped green onions
Prepare pasta according to package directions. Reserve ½ cup pasta cooking liquid and drain pasta in colander. Whisk together cooking liquid, peanut butter, vinegar, soy sauce, and green onions. Add mixture and chicken to pasta, tossing to combine well. Serve as a side dish or main dish.
Optional: serve whole cooked chicken breast on a bed of pasta
