Hamburger Soup


Hamburger Soup

Yield: 10-12 servings

1- 2 lb. hamburger/ ground turkey
Minced garlic
1 onion
5-6 carrots
4 potatoes
2-3 celery stalks
1 can cream of celery soup
1 quart tomato juice or 1 can tomato sauce and some water
2 bay leaves
1/2 tsp Indian madras curry powder (or standard curry powder could work)
1/2 tsp dried basil
1/2 tsp fennel
1-2 cups frozen french-cut green beans (canned could work, but not as good)
1/2 box pasta (mini farfalle, macaroni)
Salt and pepper to taste

Brown hamburger with garlic and onion and drain. Add sliced/diced vegetables. Add enough water to cover. Cook for 15-20 minutes. Add soup, tomato juice/sauce, green beans, seasonings, salt and pepper, and pasta. Simmer 10-15 minutes until pasta and veggies are both done. Remove bay leaves before serving.
