Minestrone


Minestrone

Yield: 6-8 servings

3 beef bouillon cubes
2 c. boiling water
1 (16-oz.) can diced tomatoes
1 small can tomato sauce
Dash of pepper
1-2 c. elbow macaroni or other pasta
1 TB onion flakes
½ tsp. salt
1 clove garlic, minced
1/2 tsp. lemon juice
1 tsp. chili powder

Veggies to choose from:
canned or frozen corn
canned or frozen green beans
chopped cauliflower
chopped broccoli
diced zucchini
sliced carrots

Dissolve bouillon cubes in boiling water. Add remaining ingredients. Simmer until pasta is tender. Serve sprinkled with parmesan cheese.
