General Tso’s Pork Tacos  w/Orange-Broccoli Slaw

Yield: 8-10 servings



2 c. chicken broth
1 8-oz. bottle Hoisin Sauce
1/3 c. white vinegar
¼ c. reduced sodium soy sauce
¼ c. sugar
¼ c. cornstarch

5 garlic cloves, minced
3 TB fresh ginger, minced
1 tsp. crushed red pepper flakes
2 ½ lb. pork tenderloin
2/3 c. orange juice
1/3 c. olive oil
½ c. fresh cilantro, chopped
2 10-oz. pkgs. broccoli or cabbage slaw

Whisk broth, hoisin sauce, vinegar, soy sauce, sugar, cornstarch, garlic, ginger, and red pepper in Crock-pot. Add pork and spoon some sauce over top. Cook on low for 6-8 hours. Remove pork and shred with 2 forks. Place pork in serving dish and coat with desired amount of sauce from Crock-pot. In a separate bowl, whisk together orange juice, olive oil, and cilantro in large bowl. Stir in broccoli slaw. Cover and refrigerate until ready to serve. Serve in white corn tortillas.
