Puffy Pizza Dough

Yield: 1 medium pizza crust
1 pkg. yeast
2 tsp. sugar
1 ½ c. warm water
4 c. flour
3 tsp. grated Parmesan cheese
1 tsp. salt
2 TB olive oil
2 TB cornmeal
Prepare yeast in 1 cup warm water and 1 tsp. sugar. Add remaining water and sugar and remaining ingredients (except cornmeal) and knead thoroughly. Add more flour if needed. Cover with a damp towel and let rise 30-45 minutes. Roll out and coat bottom with cornmeal. Bake 12-15 minutes at 425 degrees. It can be cooked a few minutes without toppings or it can be placed in the oven with toppings on it for the whole time. Watch while cooking to make sure dough appears cooked, toppings are warm and cheese is melted.
