All-Bran Muffins

Yield: 12 large muffins
2 ½ c. All-Bran cereal (not buds)
2 ½ c. milk
2 eggs
1 c. oil (or 1/2 oil & 1/2 applesauce, but muffins will be chewier)
1 c. sugar
2 tsp. baking powder
3 c. flour
Mix cereal and milk in large bowl. Let sit for 2 minutes and stir. Add remaining ingredients and mix. Batter will not be completely smooth. Pour into greased muffin tins. Bake 25 minutes at 400 degrees for normal size muffins. For mini muffins, bake 375 degrees for 20-23 minutes.
