Zucchini Bread


Zucchini Bread

Yield: 2 loaves



3 eggs
1 c. oil
2 c. sugar
2 c. grated zucchini (not food processed)
3 tsp. vanilla
½ nuts, chopped (optional)
3 c. flour
1 tsp. salt
1 tsp. baking soda
3 tsp. cinnamon
¼ tsp. baking powder

Stir eggs, oil, sugar, and zucchini. Separately stir flour, salt, soda, cinnamon, and baking powder.  Mix together and add vanilla and nuts. Bake at 325 for 1 hour.
